Ingredients
- 1 lb ground beef
- 1 slice of bread, toasted and soaked in water (trust the process)
- 1 bunch of parsley, chopped
- 1 yellow onion, chopped
- 3 garlic cloves, minced
- allspice
- cayenne pepper
- cardamom
- sumac
- nutmeg
- smoked paprika
Make it
-
First things first, soak your BBQ sticks in water for at least 30 minutes.
-
Add ground beef (and lamb if using), parsley, onion, garlic, and 2 taps of allspice, cayenne, cardamom, nutmeg, and several pinches of sumac to a food processor. You want to see more sumac than other seasonings in the food processor.
-
Grab your soaked toast and squeeze excess water into the sink. Place the wet toast into the food processor.
-
Run it, pulse it, mix it.
-
Remove from the food processor and form into long logs around the BBQ skewers.
-
Grill for about 3–4 minutes on each side.
-
Remove from heat and allow to cool for 5 minutes before serving.
