Heavier on sumac than you think. If you can see the sumac out-volume the other spices in the food processor, you're doing it right.

Ingredients

  • 1 lb ground beef
  • 1 slice of bread, toasted and soaked in water (trust the process)
  • 1 bunch of parsley, chopped
  • 1 yellow onion, chopped
  • 3 garlic cloves, minced
  • allspice
  • cayenne pepper
  • cardamom
  • sumac
  • nutmeg
  • smoked paprika

Make it

  1. First things first, soak your BBQ sticks in water for at least 30 minutes.

  2. Add ground beef (and lamb if using), parsley, onion, garlic, and 2 taps of allspice, cayenne, cardamom, nutmeg, and several pinches of sumac to a food processor. You want to see more sumac than other seasonings in the food processor.

  3. Grab your soaked toast and squeeze excess water into the sink. Place the wet toast into the food processor.

  4. Run it, pulse it, mix it.

  5. Remove from the food processor and form into long logs around the BBQ skewers.

  6. Grill for about 3–4 minutes on each side.

  7. Remove from heat and allow to cool for 5 minutes before serving.
